Zucchini Soup Recipe

Dairy Free, Vegetarian, Kosher, Gluten Free

• 1 white onion cut in small pieces
• 2 tbsp of olive oil
• 2 tbsp of chicken soup mix
• 4 small zucchini cut into circles
• 6 white potatoes peeled and cut into big chunks
• Handful of fresh dill
• Dash of salt

In a pan, put the oil, chicken soup mix, and onion.
Fry it until the onions are browned

In a medium sized pot, add the onion mixture, vegetables, and dill.
Fill the pot 3/4 full with water
Add some salt

Boil until the vegetables are soft

With a hand blender, Puree the soup into liquid.

Serve in bowls and enjoy.
